Muddle the mint: In a sturdy glass or pitcher, gently press the mint leaves with a spoon to release oils. Don’t mash into a paste—just a few light presses.
Stir the base: Add lemon juice, lime juice, honey or syrup, and still water. Stir until the sweetener dissolves.
Taste and adjust sweetness.
Chill it down: Add a generous handful of ice. Stir again to cool the drink quickly.
Add the bubbles: Pour in the sparkling water right before serving. Give it a gentle stir to keep the fizz.
Garnish and serve: Add fresh mint, citrus wheels, or cucumber slices.
Serve immediately while cold and bubbly.
Pitcher version (serves 6): 2 cups lemon juice, 1 1/2 cups lime juice, 3/4–1 cup honey or simple syrup, 3 cups cold still water, 4 cups chilled sparkling water, a big handful of mint. Build the same way in a large pitcher.
