Ingredients
  

  • 1/3 cup fresh lemon juice (about 1 large lemon)
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2–3 tablespoons honey or simple syrup (adjust to taste)
  • 1/2 cup cold water (still)
  • 1 cup chilled sparkling water (club soda or seltzer)
  • 8–10 fresh mint leaves (plus extra for garnish)
  • Ice (crushed or cubes)
  • Optional add-ins: a few cucumber slices, a handful of berries, or a pinch of sea salt
  • Optional for a crowd: Thin lemon and lime wheels for garnish

Method
 

  1. Muddle the mint: In a sturdy glass or pitcher, gently press the mint leaves with a spoon to release oils. Don’t mash into a paste—just a few light presses.
  2. Stir the base: Add lemon juice, lime juice, honey or syrup, and still water. Stir until the sweetener dissolves. Taste and adjust sweetness.
  3. Chill it down: Add a generous handful of ice. Stir again to cool the drink quickly.
  4. Add the bubbles: Pour in the sparkling water right before serving. Give it a gentle stir to keep the fizz.
  5. Garnish and serve: Add fresh mint, citrus wheels, or cucumber slices. Serve immediately while cold and bubbly.
  6. Pitcher version (serves 6): 2 cups lemon juice, 1 1/2 cups lime juice, 3/4–1 cup honey or simple syrup, 3 cups cold still water, 4 cups chilled sparkling water, a big handful of mint. Build the same way in a large pitcher.
