Method
 

  1. Skillet Chicken Pasta (15 minutes): Sauté garlic in olive oil. Add a jar of marinara or a spoonful of pesto plus a splash of pasta water. Stir in chopped chicken and warm through. Toss with hot pasta and finish with Parmesan and a squeeze of lemon.
  2. Creamy Chicken Enchiladas: Mix shredded chicken with salsa, a little cream cheese or Greek yogurt, chili powder, and cumin. Roll in tortillas, top with enchilada sauce and cheese, and bake at 375°F (190°C) for 15–20 minutes until bubbly.
