Ingredients

  • Grains/Carbs: Small flour or corn tortillas (8–10), penne or short pasta (8 oz), naan or flatbread (2–4), rice or microwaveable grain packets (2 cups cooked), crusty bread or baguette (optional for soup)
  • Dairy: Feta or queso fresco, shredded mozzarella, Parmesan, plain Greek yogurt or sour cream
  • Canned/Condiments: Black beans (1 can), corn (1 can or frozen), crushed tomatoes (1 can, 14–15 oz), pesto (jarred), Caesar dressing or your favorite vinaigrette, salsa, mayonnaise
  • Extras (optional but tasty): Pickled jalapeños, olives, capers, jarred roasted red peppers

Method
 

  1. Dinner 1: Street-Style Chicken Tacos Toss chicken with a squeeze of lime, a pinch of chili powder, cumin, and a little olive oil. Warm gently in a skillet.
  2. Char tortillas over a gas flame or in a hot dry pan.
  3. Top with diced red onion, cilantro, and salsa. Add avocado and a dollop of yogurt or sour cream if you like.
  4. Tip: A little smoked paprika adds that grilled flavor back.
  5. Dinner 2: Creamy Pesto Chicken Pasta Boil pasta in salted water. Reserve 1/2 cup pasta water.
  6. In a skillet, warm chicken with 2–3 tablespoons pesto. Stir in a splash of pasta water and a spoon of Greek yogurt for creaminess.
