Ingredients
  

  • For the Roast Chicken (Day 1): 1 whole chicken (about 3.5–4.5 lb)

  • Tortillas or flatbreads

  • Veggies: cherry tomatoes, cucumber, corn, avocado, red onion, bell peppers
  • Fresh herbs: cilantro, basil, or parsley
  • Limes and lemons
  • Cheese: feta or queso fresco (optional)
  • Pantry items: olive oil, vinegar, honey, Dijon mustard, soy sauce, sesame oil, chili flakes, salsa
  • Yogurt or mayo for quick sauces
  • Broth basics: carrot, celery, onion (for stock)

Method
 

  1. Roast the Chicken (Day 1 Dinner): Pat the chicken dry. Rub with olive oil or butter, salt, pepper, and herbs. Stuff the cavity with lemon halves and garlic. Roast at 425°F (220°C) for 50–70 minutes, until juices run clear and a thermometer reads 165°F in the thigh. Rest 10–15 minutes. Serve with a simple salad and bread.
  2. Shred and Sort: Once cool enough, pull the meat from the bones. Keep breast meat and dark meat in separate containers for different textures. Save the wings for snacking or salads. Keep the carcass for stock.
  3. Make Quick Stock: In a pot, cover the carcass with water. Add onion, carrot, celery, and a pinch of salt. Simmer 45–60 minutes. Strain and cool. This becomes the base for soup or grains. Store in the fridge up to 4 days or freeze.
